1.备葱段、姜片、麻椒、八角。

2.雪里红洗净,切细末备用。锅内加油,加入麻椒和八角炒香,加入葱姜翻炒,加入雪里红炒至断生,盛出备用。

3.带皮五花肉洗净,切大块。

4.锅内加清水,放入五花肉,加料酒,小火煮20分钟。

7.平底锅内放少许油,肉皮朝下,放入锅中,煎制。盖上锅盖,防止油減到身上。

8.煎至微黄,取出晾凉。

11.将炒好的雪里红放在肉上,加酱油、食盐、料酒、白糖,上锅大火烧开,改中小火蒸一小时。

12.取出蒸碗,篦出汤汁,起锅烧开,加味极鲜酱油、白糖调味,水淀粉勾薄芡。

13.蒸碗上盖一个盘子,快速翻转,将肉倒扣在盘中,淋上汤汁。

小窍门&温馨提示
雪里红要清洗干净,考虑它本身是咸的,所以用盐和酱油要适量。煎肉皮时要盖上锅盖,防止油烫伤,小火煎五分钟,目的是让肉皮软烂。
